Koftas are not ordinary meatballs. They are normally oblong or cylindrical in shape, rather than spherical. As a result, they look more like miniature sausages than actual balls of meat. Commonly featured in Mediterranean and Middle Eastern cuisines, koftas are made with minced meat — such as beef, chicken, lamb, or pork — and mixed with various spices. The meat is also often combined with rice, vegetables, and eggs to create a smooth consistency.
